How To Make Apple Crisp Overnight Oats:

1. First, to an 8 oz. mason jar, add the “Base” ingredients and stir.

2. Next, add the “Apple Filling” ingredients to a microwave safe bowl, stir, and then microwave on high for one minute.

FYI – If you like your apples a bit on the softer side, give those apples another stir and then warm for an additional 30 seconds. For me, I like my apples to have a little bit of bite left to them, so I stick with just the one minute.

3. Then, take the “Apple Filling” and add it to the jar without stirring. That way you’ll have distinct layers for that authentic apple crisp taste.

4. Place your mason jar filled with apple-y goodness in your refrigerator and allow it to chill and do it’s thang for at least 6 hours… In fact, this jar of deliciousness will keep for about 4 days or so.

5. Just before eating, add your “Final topping.”

Yum! Each bite has a bit of hearty oats plus that perfectly sweet, slightly spiced apple crisp flavor you crave.

Overnight oats are usually eaten cold right from the fridge. However, you can certainly heat them and enjoy warm. You’ll need to either make the oats in a jar that can go straight from fridge to microwave, or transfer the apple crisp to a fresh, microwave-safe container.

Top Tips for Making Apple Crisp Overnight Oats:

  • I find that these overnight oats taste best when made in mason jars (it makes layering a lot easier). However, any bowl, mug or drinking glass will do. Use a container that has a lid, or you can cover the top with plastic wrap.
  • Do not add the topping until just before you are ready to eat. The granola will lose that great crunch if it soaks with the rest of the ingredients in the fridge.
  • If you want to have breakfast for multiple days, double or triple this recipe so you have breakfast ready to go when you need it.
  • For this recipe I like to use Gala or Fuji apples, but any type of apple will work just fine.
  • Apple is typically my favorite flavor, but you can prep this easy crisp-inspired recipe with other fruits, as well! Try making overnight oats topped with fresh blueberries, blackberries, pitted cherries, or peach chunks. However, I recommend that you microwave any of these softer fruits for only 30 seconds at a time. Alternatively, you can keep them fresh and avoid the heating altogether!
  • Keep the overnight oats covered and stored in the fridge for up to 4 days.

This easy overnight oats recipe takes a classic apple crisp dessert and transforms it into a delicious, convenient and vegan fall breakfast!

Ingredients

Base

Apple Filling

  • 3/4 c. apple (about 1/2 of one apple), chopped into 1/2 inch pieces
  • 1/2 Tb. lemon juice or apple cider vinegar (7 ml)
  • 1/4 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • 1 tsp. maple syrup, plus more to taste (or 1 packet of monk fruit)

Final Topping

Before You Begin! I recommend measuring out all ingredients called for in this recipe so they are ready to go the moment you need them.
