I am all about a good dip. In my opinion, they are the perfect party food. Whether it’s a birthday party, a sporting event, a holiday – you need a good dip for them all. Whether you are dipping with chips or veggies or fruit – yep, I love them all.

So every summer, this Corn Dip Recipe is a must make for me. I had to squeeze it in one more time this summer when I had some extra fresh corn. And my family gobbled it up in no time flat!

How to Grill Corn

This recipe is best with fresh grilled corn. If you want to make this year round, you can use frozen corn, but I always like it best with grilled corn. So here is how I grill corn for this recipe.

  1. Heat your grill to medium heat. I like to let it heat up for 5-10 minutes to make sure it is hot.
  2. Shuck the corn and clean off all of the silk.
  3. When the grill is hot, place the corn on the grill.
  4. Grill for about 10 minutes, turning a few times to cook it evenly. You don’t want to overcook the corn, as it won’t be as juicy.
  5. Let the corn cool before cutting the kernels from the cob.

Ingredients in The Corn Dip Recipe

Here are the other ingredients you’ll need for this recipe:

The grilled corn, cut off of the cob
Mayonnaise
Sour cream
A mix of cheese – I like cheddar and pepper jack
Chopped green chiles – I use a can, unless I happen to have fresh chiles on hand
Green Onions
Cumin

How to Make This Fresh Corn Dip

The only real work you have for this recipe is grilling the corn. This is a really easy recipe!

  1. Stir together the mayonnaise and sour cream. Add in the cheese, green chiles, green onions and cumin and stir to combine.
  2. Add in the cooled corn that has been cut from the cob.
  3. Taste and season with salt as needed. Don’t go too crazy, as most chips are quite salty.
  4. Refrigerate the dip until needed. It can be served straight from the refrigerator.

This Corn Dip Recipe with Green Chiles is a hit at every party or get together. Grilled corn, green chile and cheese make up the base of this Southern inspired dip.

Ingredients

  • 2 ears fresh corn
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded pepper jack cheese
  • 1 4 oz can chopped green chiles, drained
  • 3 green onions sliced
  • 1/4 teaspoon cumin
  • Salt to taste

Instructions

  • Heat a grill to medium high. Shuck and clean the corn, then grill until it is charred, turning as needed, about 15 minutes. Remove and let cool completely, then cut the kernels off the corn cob.

  • In a medium bowl, stir together the mayonnaise and sour cream. Add both cheeses, the green chiles, green onions and cumin. Add in the corn and stir to combine.

  • Season to taste with salt.

  • Serve with tortilla chips, corn chips, or crackers.

  • Refrigerate any leftovers.

If using frozen corn, you will need about 1 1/2 - 2 cups of corn.
