This dinner is so easy to make, I’m telling you the most work you’ll do for this Pineapple Chicken recipe is chopping up the chicken! Plus, I absolutely LOVE that there’s no added sugar in this recipe. A lot of Chinese takeout copycat recipes have tons of brown sugar, it’s really not needed once you take a bite of this dish!
I think the first words out of my husbands mouth when he took a bite was, “WOW that chicken literally bursts with flavor!” He’s so right! It kind of amazes me how much of a flavor punch soy sauce combined with the vinegar and pineapple juice really packs in. I served this over steamed white rice, but really any rice taste great with this dinner.
Be sure to use a DEEP SKILLET for this one – you need a lot of space for those yummy sugar snap peas. If you don’t have a deep skillet, just use your favorite large pot instead.
What’s the best way to cut chicken breast into cubes?
Use a sharp, non serrated knife to slice through boneless chicken breast with ease.
Should the pineapple chunks be drained first?
No! Just add the entire can of pineapple chunks, juice and all, directly into the skillet. The sweet pineapple juice combines wonderfully with the soy sauce and vinegar to give it a great sweet & sour flavor combination.
How to make this Pineapple Chicken recipe:
Heat olive oil in a deep skillet and saute cubed chicken breast until cooked through.
Add in garlic, pineapple chunks, soy sauce, and vinegar.
Add in sugar snap peas and simmer until done. Serve over rice.
Can the sugar snap peas be substituted?
You can substitute the sugar snap peas for the same amount of fresh broccoli florets or even fresh green beans, just adjust the final cooking time to insure the veggies are fork tender.

Ingredients
- 3 boneless skinless chicken breasts cut into small chunks
- 1 tsp olive oil
- 20 oz pineapple chunks in juice undrained
- 1/3 cup soy sauce
- 1/3 cup vinegar
- 2 tsp minced garlic
- 16 oz sugar snap peas
- 2 cups cooked brown rice
Instructions
Saute chicken pieces and olive oil in a skillet over medium high heat until juices run clear and chicken is done, measuring 165 degrees in the center.
Add in pineapple and juice, soy sauce, vinegar, garlic, and sugar snap peas.
Bring mixture to a boil, then reduce heat and simmer for 8 minutes.
Serve hot over brown rice.

I made this and it was very good. I used a whole bag of ready snap peas. It was double the amount the recipe called for, but I like them a lot. I also used boneless chicken thighs. I made brown rice to put it over. It was very good. I think next time I’ll add some pimientos.

I could not believe the flavor that came through in each bite. Truth be told, I’m not generally a chicken fan because most chicken tastes the same… but THIS does not taste the same. It’s delicious.

I am giving this a 5 star review based on it had most ingredients I had on hand, thanks to second harvest food distribution. I had chicken tenders, cannned crushed pineapple and a few pieces of fresh pineapple and sugar snap peas! I have to eat gluten free and did not have gf soy sauce on hand. The food bank also gave me an Asian meal with a packet of spicy red curry sauce. Since we don’t eat spicy I used a can of coconut milk and the spicy sauce to make a mild sauce. I am serving the chicken mixture over the zoodle noodles that were in the Asian meal kit. I will try this recipe as written next time! Btw my oven quit working last week so I needed a stove top chicken meal! Thank you so much for this recipe!
